So I have been using wled with Xlights for my Christmas display. It has been great.

There has been a number of fires due pixel faults during the holidays and everyone is jumping it to powering off the pixels when not in use.

I understand Wed can trigger a relay if there is no light output…

How does that work when receiving Sacn? When it stops receiving Sacn and my brightness is set to 0 will the relay automatically open the circuit.

When my brightness is set to 0% with brightness override. Will the relay trigger when Sacn starts.

It will when realtime data stops and the WLED state is off.
If your host keeps sending 0s or black color it will not.
