I’ve upgraded to WLED 13b5 and under the sync interfaces I can only select E1.31 or Art-Net. Under WLED 12 I was able to select DDP. Does anybody know why that has changed?

You cannot disable it. Not even by custom compiling unless you remove DDP handling code from WLED.
