New to WLED. I have a 5M SK6812 driven by a ESP8266. When I select a different effect, the lights change to the new effect for a few seconds and then go back to the default. Is this a setting?

SOunds like a reset is happening. Once you select an effect it should stay there until changed.
I would advise watching the blue light in the 8266 and try to see if you can detect a reset happening.
Definitely you have a power problems.
